Won Bok Wraps

Ingredients: 10 Won Bok (Chinese Cabbage) leaves, stems cut off, green part lightly steamed 1/2 zucchini, shredded 1/2 carrot shredded 1/2 cup yellow and/or red bell pepper, diced 6-8 olives, pitted and diced 6 mushrooms, sliced thin 1/2 cup tamari pumpkin seeds (get these in bulk food section at Down To Earth) shredded fresh mint leaves Vinaigrette Dressing: 3 TBS white wine vinegar 6 TBS extra virgin olive oil 1/2 clove garlic, minced 1/2 tsp salt 1/4 tsp ground black pepper 1/2 tsp dijon mustard 1/4 tsp paprika Combine all ingredients and whisk or blend.
Directions: Lay out a Won Bok leaf, place a small amount of shredded zucchini, carrot, bell pepper, olives, mushrooms, pumpkin seeds. Place a dollop of vinaigrette. A couple of shreds of mint leaves. Roll up. Enjoy
