Won Bok Wraps

Ingredients:
  • 10 Won Bok (Chinese Cabbage) leaves, stems cut off, green part lightly steamed
  • 1/2 zucchini, shredded
  • 1/2 carrot shredded
  • 1/2 cup yellow and/or red bell pepper, diced
  • 6-8 olives, pitted and diced
  • 6 mushrooms, sliced thin
  • 1/2 cup tamari pumpkin seeds (get these in bulk food section at Down To Earth)
  • shredded fresh mint leaves
  • Vinaigrette Dressing:
  • 3 TBS white wine vinegar
  • 6 TBS extra virgin olive oil
  • 1/2 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp dijon mustard
  • 1/4 tsp paprika
  • Combine all ingredients and whisk or blend.

    Directions:
  • Lay out a Won Bok leaf, place a small amount of shredded zucchini, carrot, bell pepper, olives, mushrooms, pumpkin seeds.
  • Place a dollop of vinaigrette. A couple of shreds of mint leaves. Roll up.
