Chocolate Coconut Nuggets With Almonds

I got shredded coconut at the bulk food bins at Down To Earth. The brown rice syrup comes in a jar next to the honey. And carob chips in the baking section.

Ingredients:
  • 1 cup shredded coconut flakes
  • 1/3 cup brown rice syrup
  • almonds
  • 1 cup carob chips
  • Directions:
    1. In a large bowl combine the coconut flakes and brown rice syrup. This will make a sticky mess.
    2. Spray cooking spray on a baking sheet to keep these from sticking. Roll up about a tablespoon of the coconut rice syrup mix and place it on the baking sheet.
    3. Top with an almond. Should make about 12 pieces.
    4. In a double boiler, melt carob chips. We had to add water because the melted carob was too thick and sticky. You could also add some rice milk or soy milk to thin the melted chocolate.
    5. Cover each of the coconut almond pieces with melted carob. Place sheet in the fridge to let them set up.
