Chilled Noodle Salad With Mango

Mango season in Hawaii. Here's a refreshing salad using fresh mango.

This is from Vegetarian Times.

Dressing:
  • 1/4 sup light brown sugar
  • 1/3 cup fresh lime juice
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced (2 tsp.)
  • 1 red chili pepper, chopped fine
  • Salad:
  • 8 oz. dry rice stick noodles
  • 1 carrot, cut into thin strips
  • 1 1/2 cup lettuce sliced thin
  • 1/2 cup basil leaves, sliced thin
  • 1/2 cup mint leaves, sliced thin
  • 1/2 cucumber, sliced thin
  • 1 cup bean sprouts
  • 1 green onion, sliced thin
  • 1 large ripe mango, peeled, pitted, and thin sliced
  • 1/3 cilantro leaves
  • 1/2 cup peanuts, crushed
  • Directions:
    1. Make dressing. Combine all ingredients in a saucepan and heat over low heat until sugar melts. Let this cool.
    2. Cook rice noodles by placing them in boiling water several minutes. Remove, strain and run under cold water.
    3. Cook carrot in a steamer or boiling water for several minutes. Rinse and combine with cooked rice noodles. Let this cool.
    4. Toss noodles and carrots with lettuce, mint, basil, and half the dressing.
    5. Divide in four bowls or plates. Top each with cucumber, bean sprouts, and green onions. Arrange mango slices on top and drizzle with remaining dressing.
    6. Garnish with cilantro and peanuts.
