Chilled Noodle Salad With Mango

Mango season in Hawaii. Here's a refreshing salad using fresh mango.This is from Vegetarian Times.Dressing: 1/4 sup light brown sugar 1/3 cup fresh lime juice 1/4 cup soy sauce 2 cloves garlic, minced (2 tsp.) 1 red chili pepper, chopped fine
Salad: 8 oz. dry rice stick noodles 1 carrot, cut into thin strips 1 1/2 cup lettuce sliced thin 1/2 cup basil leaves, sliced thin 1/2 cup mint leaves, sliced thin 1/2 cucumber, sliced thin 1 cup bean sprouts 1 green onion, sliced thin 1 large ripe mango, peeled, pitted, and thin sliced 1/3 cilantro leaves 1/2 cup peanuts, crushed Directions:
- Make dressing. Combine all ingredients in a saucepan and heat over low heat until sugar melts. Let this cool.
- Cook rice noodles by placing them in boiling water several minutes. Remove, strain and run under cold water.
- Cook carrot in a steamer or boiling water for several minutes. Rinse and combine with cooked rice noodles. Let this cool.
- Toss noodles and carrots with lettuce, mint, basil, and half the dressing.
- Divide in four bowls or plates. Top each with cucumber, bean sprouts, and green onions. Arrange mango slices on top and drizzle with remaining dressing.
- Garnish with cilantro and peanuts.
