Lima Bean With Pesto Pasta

Ingredients: Pasta shapes, 8 ounces Lima beans, drained, 1 can Pesto sauce, 3 Tbsp Soy yogurt (or soy milk), 2/3 cup Pine nuts, 3 Tbsp Soy parmesan, grated Nutmeg, grated Extra-virgin olive oil, 2 Tbsp Salt & pepper (freshly grounded) Fresh basil to garnish Directions:
Serves four
- Cook pasta until al dente. Drain.
- Return pasta to the pan, season, and stir in nutmeg and oil.
- Heat Lima Beans in a saucepan with pesto and soy yogurt, stirring mixture until it begins to simmer.
- Toss mixture into pasta and mix well.
- Serve in bowls, topped with pine nuts, grated soy parmesan and basil sprigs
