Lima Bean With Pesto Pasta

Ingredients:
  • Pasta shapes, 8 ounces
  • Lima beans, drained, 1 can
  • Pesto sauce, 3 Tbsp
  • Soy yogurt (or soy milk), 2/3 cup
  • Pine nuts, 3 Tbsp
  • Soy parmesan, grated
  • Nutmeg, grated
  • Extra-virgin olive oil, 2 Tbsp
  • Salt & pepper (freshly grounded)
  • Fresh basil to garnish
  • Directions:
    1. Cook pasta until al dente. Drain.
    2. Return pasta to the pan, season, and stir in nutmeg and oil.
    3. Heat Lima Beans in a saucepan with pesto and soy yogurt, stirring mixture until it begins to simmer.
    4. Toss mixture into pasta and mix well.
    5. Serve in bowls, topped with pine nuts, grated soy parmesan and basil sprigs

    Serves four
