Garden Pasta

We used fettucini noodles, but you can use any kind of pasta. And you can substitute any vegetables too.

Ingredients:
  • 1/2 package Barillo Fettucini noodles
  • 3 TBS extra virgin olive oil
  • 1/2 cup white wine
  • 1/2 onion, sliced
  • 12 cherry tomatoes, cut in half
  • 1/2 large red bell pepper, cut julienne
  • 1 medium zucchini, cut julienne
  • Salt and pepper
  • Vegan Parmesan cheese (available at Down To Earth)
  • 1 tsp fresh thyme, chopped
  • 2 TBS fresh parsley, chopped
  • chili flakes (optional)
  • Directions:
    1. Drop the pasta in boiling salted water. Cook per package directions.
    2. Saute onion in the olive oil over medium heat. Season with salt and cook until it begins to soften.
    3. Add bell pepper, zucchini, and tomatoes. Cook until soft.
    4. Season with salt and pepper. Add thyme. Add white wine, and let it cook down a bit. Add cooked fettucini noodles and toss well.
    5. Add vegan parmesan, parsley and toss. Top with a bit of olive oil and chili flakes.
