We used fettucini noodles, but you can use any kind of pasta. And you can substitute any vegetables too.Ingredients: 1/2 package Barillo Fettucini noodles 3 TBS extra virgin olive oil 1/2 cup white wine 1/2 onion, sliced 12 cherry tomatoes, cut in half 1/2 large red bell pepper, cut julienne 1 medium zucchini, cut julienne Salt and pepper Vegan Parmesan cheese (available at Down To Earth) 1 tsp fresh thyme, chopped 2 TBS fresh parsley, chopped chili flakes (optional)
Directions:
- Drop the pasta in boiling salted water. Cook per package directions.
- Saute onion in the olive oil over medium heat. Season with salt and cook until it begins to soften.
- Add bell pepper, zucchini, and tomatoes. Cook until soft.
- Season with salt and pepper. Add thyme. Add white wine, and let it cook down a bit. Add cooked fettucini noodles and toss well.
- Add vegan parmesan, parsley and toss. Top with a bit of olive oil and chili flakes.
